
At Mission BBQ the Turkey was cooked close to perfection. The difficulty with white meat is that it is easy to dry the meat out. Here the turkey had great moisture throughout the whole piece. It had great flavor on it's own. Not over powering flavoring from the rub but it did provide a good pepper flavor that tickles the taste buds. I think it pairs well with the Smokey Mountain sauce, which is my personal favorite.

I also paired it with two bones of the spare ribs. I know the ribs have been covered a few times here but what impresses me with the ribs is the rub. While I prefer to eat them with sauce I tried a few bites without sauce and it is good but today the star of the show is the turkey and want to make sure it gets its due.
My buddy Rich also stopped by and he got the end of the chopped brisket, which means it is the end of the line and often a bit drier than normal since it sits longer, or at least has the potential to sit there longer. Let's see what he had to say. These are his near exact quote. Good but a little tough. It was well sauced but would have preferred the smokey mountain instead of the Memphis. The roll was fresh, it did a good job of absorption the sauce, it stayed together. Also he gave a shout out to the sweet tea.
Overall another good experience at Mission BBQ.
