Macona on Haddon Ave in Collingswood is bringing the flavors of Austin right to South Jersey. This small shop is delivering on the flavor and the cool aspect is that all that keeps you from the kitchen is a small curtain so you can peer behind and see where the magic is happening.
Now the menu is always changing as they experiment with new flavors to give you a new unique experience each time that you go. This was the menu when I went last.
Wanting to try as much as I could during this visit I decided to go with the big three of Ribs, brisket and pulled pork.
Starting with the ribs, as you can see below they had a good coloring and were cooked to the perfect temp, so that they pulled right off the bone when I bite into them. Sometimes you will come across a rib that is a bite dry and you need the sauce to give it some moisture but that is not the case here. It had a great moisture level and the pesto rub gave it a unique bit in each bite. You can add one of the three sauces if you want to layer some flavors if you want but you don't need to.
The next meat was the brisket. It fell apart in my hand as I was trying to pick it up. Not an issue with the meat just me being bad at framing photographs. The brisket had a pepper rub on it, like you would expect from an BBQers from Austin. The flavor took me back to my trip to Austin. The beef was cooked wonderfully and I really enjoyed pairing it with the sweet BBQ sauce. (also used for my ribs because I have a titanic sweet tooth) This was a great taste and great brisket. I would place it as the number 2 brisket in South Jersey that I have tried so far.
Now the Pulled pork I decided to pair with the Alabama white, which if you haven't tried white sauce yet you have to do it. It's hard to explain how good it is. It will surprise you. The pork itself had a good bark and was not dry. Lots of places of pulled pork that is on the drier side and it doesn't let the nature flavor of the pork talk to itself. Here they let the meat do the talking which I love. You get the flavor that comes with the juices. Lots of flavor and Lots of love.
It was a great first visit to Macona for the Premiere South Jersey BBQ and looking forward to making a return trip.

I also want to add that they are doing some real adventurous things with the menu so if you go and think the rub is odd go back and try it another time. The menu is up on the website so give it a check to see when your favorite flavors are on the menu.
