Well went to Smoke last week and because of the time and effort in the cheesesteak tour I have been a bit slow to get this published. Sorry, loyal readers but I wanted to mix the content up a bit. Leave a comment if you like the cheesesteak tour or if you prefer I stick to the shorter review pieces.
Alright back to business, the ribs at Smoke are wow, so tasty. I heard a coworker refer to a resturant this week as having yummy good eats and I think that is the way to describe the ribs as just yummy good eats. I am not surprised, Smoke had just been named the top bbq resturant in the area. Seriously if you haven't been go. Those people are making magic with fire and meat.
Now the ribs were cooked to perfection. Each bite just ripped off the bone and was tender. IT had an amazing flavor. Unlike the Ribs at back Alley there were not gigantic but what they lacked in size they made up for in flavor profile. You can taste the smoke as well as the salt and pepper in the rub. I used the vinegar sauce for the first one and quickly figured out the sauce was not needed for this one, This was a good meal.

What I think smoke does so well is it lets the meat be the star and everything they do is to compliment the natural profile of the meat. This was a great meal and if you haven't checked it out yet, go give it a try.
Oh yeah, my brother got the pulled pork sandwich, he didn't give me a review of it but it looks good.
